The best way to clean your cutting board is to wash with a moist
cloth and mild soapy water. Then
rinse with moist cloth and warm water
only and pat dry. We like to use paper towels since the kitchen
sponge or dishcloth contain more bacteria than you bathroom
surfaces.
Please resist the temptation to run a faucet over or soak your
wooden cutting board in water. Keep the cutting board from sitting
in puddles of water on your counter and
do not
allow moisture of any type to stand on the board for long periods of
time to minimize the water saturation of
the wood. Since wood is a material that changes its size as it
gains or loses moisture, rapid shifts from damp to dry can cause
cupping . . . so do not dry out your cutting board too quickly by
placing near a heat source.
You can sanitize your cutting boards with a vinegar solution
consisting of a one to five dilution of water to vinegar. Flood the
surface with the vinegar solution and allow it to stand for several
minutes, then rinse and air dry or pat dry with paper towels.
We use Walnut Oil, the best drying of the edible oils, to finish our
cutting boards. Every few weeks, or when you notice the board
looking dry, you can re-oil your cutting board with walnut oil.
Coat
lightly, wipe off excess, and allow the board to dry.
